Kumquat Mojito

This citrus twist on a mojito is our new favorite sip and soon to be yours too. Kumquats are grape-sized and bright orange, they grow on evergreen shrubs or small trees and tend to fly under the radar as an under-appreciated tasty member of the winter (in season December through March) citrus family. These tiny citrus gems are basically a reverse orange: sweet, edible skin and bitter, sour pulp- which is why they are so tasty in a mojito. Have extra kumquats lying around after this recipe? Try our kumquat and kale saladcandied kumquats, or a sweet and spicy kumquat and mango salsa!

Ingredients

  • 10 mint leaves
  • 3 limes (one sliced, two juiced)
  • 4 kumquats, sliced
  • 2 teaspoons brown sugar
  • Crushed ice
  • 1 ounce white rum
  • Club soda
  • Lime & mint for garnish

Prepare

  1. Muddle mint leaves, sliced lime, kumquats and brown sugar in bottom of glass.
  2. Add crushed ice, rum and club soda. Stir and garnish with extra lime and mint.
